I prefer to prune ALL Prunus species just after the first set of leaves
harden off in the spring, most Acer species too. Here in N. CA, we have
a lot of spring fungal diseases that affect these species and late
winter pruning leaves open wounds that can be infected. By late April
the window for these diseases has closed, and the wounds wall off very
quickly.
